Abbaye de Belloc is a semi-firm Trappist made cheese from France. This sheep’s milk cheese is smooth-textured and starchy with subtle nutty and fruit flavors. It’s very easy to over-indulge in.
Lagunitas Pils is an American version Czech Pilsner. I find it to be a beautiful interpretation of the style. Slightly hoppy yet not overwhelming and very clean drinking. The starchy cheese really comes out of the rind, so to speak, when the crispness of the beer arrives on your tongue. The pairing finishes with a beautiful buttery and nutty flavor that shines through at the end.
